WINTER SOUP RECIPE

if you read the blog regularly, you’ve probably heard me talk about my grandparent’s farm and how much it means to me. ever since i was a very young child we’ve been driving or taking the amtrak train 5 hours from chicago to quincy during the holidays. the sound of the long gravel driveway always made me happy because it meant we were almost there. my grandparents are always waiting in their yellow kitchen for us to arrive and usually there’s soup on the stove hot and ready for us. this is one of my most favorite soups that my grandma makes for us. pure indulgence comfort food! enjoy.

Ingredients:

• 6 cups water
• 2 beef bouillon cubes
• 6-8 medium potatoes (skin on, scrubbed  cubed)
• 1 cup diced onion
• 1 tube Jimmy Dean regular sausage (reduced fat great too!)
• 3/4-1 pound bacon
• 2 cups chopped kale
• 1/2 pint heavy whipping cream
• garlic powder
• salt and pepper to taste

• Dissolve bouillon cubes in 6 cups of water in a large pot on medium heat. Add cubed potatoes and diced onions and cook until tender. Cook sausage in a separate pan, drain off excess fat, then add to pot.

• cool the bacon separately, remove from the pan, and pat the extra grease off with a paper towel . Add remaining ingredients allowing kale to cook down, then simmer approximatly 15 minutes to allow garlic powder, salt and pepper to cook in flavor. Garnish with oyster crackers and red pepper flakes.
